Diabetic information
I have been helping Carl's mom and her husband make lifestyle changes that will improve their health. Mel is a diabetic so I have had to learn a lot about how diabetics need to be eating and exercising. It has been amazing! I think everyone needs to eat like diabetics need to. The diet still includes sugar, fat and other craving-type foods, except it is how we eat them, when, and how much.
I have had several people want this information I am finding. So, I will try to post most of it here. It will mainly be links to the information I find online from the American Diabetes Association, or other sites dedicated to helping those who have diabetes. I will label each post that has to do with this topic as "diabetes", so you can easily find all of them by clicking on the topic in the list.
Here is a great recipe for a Peach Crumble Tart. It is diabetic friendly. HOWEVER - remember that you should only be eating ONE serving. It serves 10, so be sure you are only eating your share!!

What a pool!!
Since being in Lehi for one week now (has it only been one week? It seems a lot longer than that!) we have really found this town to be great. Not only are we less than 10 minutes from Costco, Lowe's, Kohl's, Target, and Texas Roadhouse - and only about 15 minutes from SLC, Lehi has an unbelievable Rec Center. It is called Lehi Legacy Center. Of course - we had to buy a family pass to it with our children being fish out of water - and always longing to be in the water! Here are some pictures of the pool:




They also have a track, weight room (not that we need this much - we have our own weight bench in our family room to work out with), rock climbing wall, and so much more!!
Lehi, Utah.....what a great town we found!
